    The concept of ULTRA-PROCESSED FOOD appears not only in newspapers, public debates and fake news but also in Public Administration publications, which increases citizen confusion. Ultra-processed is a concept created in 2009, with an extraordinarily ambiguous definition that condemn products. With this definition, a haute cuisine recipe could be labelled as ultra-processed. In this round table, proposals for a definition to be submitted to the competent bodies and institutions will be debated. Based on a more precise definition, technologists and manufacturers will know what they are producing, nutritionists will be able to adjust their recommendations and it will be easier for consumers to follow them.
